Chewy molasses cookies are in my top 5 in terms of cookies. There is just something about the taste of molasses that I love. Especially when it is combined with cinnamon, coves, and ginger. It is literally a little taste of heaven. In light of my passion for these spices, I tend to go a little over the edge and add an additional pinch of each. As with any cookie recipe, if you want them a little crunchier, increase the baking time by a minute or so. If you want them a little softer, simply do the opposite. If you want the cookies a little darker or richer, add a little bit more molasses. This recipe will make 12 to 15 cookies. If you want more or less, divide the or multiply the ingredients accordingly. This is a recipe loved by old and young alike. I like to serve them with a cup of tea or coffee. Your kinds, of course, will enjoy them with a hot cup of coca or hot chocolate. Everybody will love these chewy molasses cookies. They are a must try.

- 1/2 cup margarine, melted or 1/2 cup shortening plus 1 tbsp of water
- 2/3 cup white sugar
- 1/2 egg
- 2 tbsp + 2tsp mollasses
- 1 1/3 cup all-purpose flour
- 1 1/4 tsp baking soda
- 1/4 tsp salt
- 3/4 tsp ground cinnamon
- 1 1/4 tsp baking soda
- 1/4 tsp ground cloves
- 1/4 tsp ground ginger

- Combine the margarine, sugar, water, and egg in a mixing bowl. Using a hand mixer or spoon, mix until well combined and smooth.
- Using a spatula gently sir the molasses into the mixture.
- In a separate bowl, mix the flour, baking soda, salt, cinnamon, cloves, and ginger. Whisk until well combined.
- Add the dry ingredients to the wet ingredients. Using a hand mixer or spoon, mix until it’s well combined and smooth.
- Cover and allow the dough to chill in the fridge for an hour or so. I have gotten away with 30 minutes in a pinch.
- After an hour, remove the cookie dough and roll it into 1 inch diameter balls. You can use the palm of your hand or an ice cream scoop.
- Preheat your oven to 375 degrees F. Place the cookies on a cookie sheet and place in the oven for 8 to 10 minutes. You will know they are done when you see cracks starting to form on the top.
- Remove the cookies from the oven. Allow them to cool in the baking pan for about 5 minutes and transfer to a wire rack to cool completely.
- Serve and enjoy your chewy molasses cookies.
