Potato salad is an excellent side dish for many occasions. It is an easy dish to make, and it can be combined with many ingredients such as apples, onions, and relish. The combination are seemingly endless. Potato salad is excellent for barbecues, picnics or for a quick snack, lunch or light supper. It can also be served either warm or cold and will keep for a couple of days.
- 3 large potatoes, cubed
- 1/4 cup green onions, chopped
- 1/4 cup pickle relish
- 2 stalks, celery, chopped
- 1 small green apple, cubes (optional)
- 1/2 cup mayonnaise
- 1 tbsp yellow mustard
Cut potatoes into cubes. Place in boiling salted water, cover and simmer until tender. Drain and set aside in a bowl of cold water. Alternatively, if time permits, allow them to cool in the fridge for a couple of hours or the freezer for about half an hour. In a mixing bowl, combine, mayonnaise, olive oil, yellow mustard, salt and pepper. Toss with boiled potatoes, apples, pickle relish, celery, and green onions. Mix until well combined.
Chill and serve on a platter with favorite main course.
