Peanut butter cookies are perhaps one of the greatest all time favorites that date back to the early 1900s. Like any baking recipe, simple adjustments to the ingredients and cooking procedure will result in a change in the texture and taste of the cookie. If you want them a little softer and chewier, you can simply add a little more flour and peanut butter. You may consider cutting the baking time back a little, as well. Thirteen to 15 minutes is about the perfect time. I bake mine for a full 15 minutes, and I still get a nice chewy, soft cookie. For a less crunchy cookie, the opposite holds true. I also use dark brown sugar as opposed to medium brown or white sugar. It seems to give a little bit or a richer taste. You can also use either creamy or chunky peanut butter. Once again, my preference is creamy peanut butter as it seems to create a nicer cookie texture.
Whatever the texture, peanut butter cookies are great served with coffee, tea, or a glass of milk. These cookies are loved by old and young alike and make a great dessert or snack. Give them a try to day.
1 1/2 cups of flour
1 stick or 1/2 cup of shortening or butter at room temperature
1/2 tsp. baking soda
1/4 tsp. baking powder
1 cup dark brown sugar
1/8 tsp or pinch of salt
1/8 tsp. (about 5 drops) vanilla extract
3/4 cup creamy peanut butter
Combine shortening and sugar in a mixing bowl. Mix, for at least one minute, using a whisk or electric mixer or by hand, until floppy and creamy. Add in the egg and vanilla; mix until smooth. Add in peanut butter and stir until nicely combined.
In a different bowl, combine flour, salt, baking powder and baking soda. Mix thoroughly until well incorporated.
Pour the flour mixture into the bowl of shortening/butter mixture and combine together. Mix until well combined, but do not over mix them.
Scoop about 1 tablespoonful of mixture using ice cream scooper or spoon and place in an ungreased baking pan or tray. Make a 3 inch space between each cookie. Flatten the cookies using a fork and make a crisscross pattern on the top. Repeat procedure for the rest of the mixture.
Bake in a preheated oven at 350 degrees for at least 13 – 15 minutes or until ever so slightly brown on the edges.
Remove from oven and place on a wire rack. Allow them to completely cool. Serve with favorite coffee or tea.
