Homemade buttermilk is simple to make. While I was on a stint in South Korea teaching, I needed some ingredients to do some baking and discovered that it was just about impossible to get it there. That is when I discovered that buttermilk can be made easily using only 2 ingredients without sacrificing the quality. Unless you enjoy drinking buttermilk, it is not the type of thing that you keep on hand or keep a lot of. In light of this, it is so much easier to make it from scratch. The recipe calls for milk and vinegar. It is best to use whole milk as it makes a richer buttermilk, but if you can’t find it any milk will do in a pinch. You can also use lemon juice, either freshly squeezed or from the container, if you prefer not to use vinegar. If you do use vinegar, make sure it is white. Cider or wine vinegar does not work very well.
