Chicken Prosciutto with Sauteed Asparagus is a delicious and elegant recipe. When combined with sauteed asparagus, it is simply out of the world. It is an incredibly easy and fast dish to prepare; the total time does not exceed 30 minutes. This dish originated in Italy, but, as with many Italian dishes, has become internationally known. This is another fine dining recipe that can be made at home to impress your friends and relatives. Serve the prosciutto up on the asparagus bed combined with some greens as a garnish. Of course, don’t forget your favorite wine and dinner rolls.
- 4 boneless chicken breast, pounded or butterfly cut
- 1/2 cup grated Parmesan cheese
- 2 tsp. fresh thyme or dry, chopped
- 4 slices prosciutto or Parma ham
- 3 tbsp. olive oil
- salt and pepper
- For Sauteed Asparagus:
- 1 bunch asparagus, trimmed and cut in half
- 2 cloves garlic, chopped
- Salt and pepper to taste
- 1 tbsp. olive oil
Season the chicken, with pepper and salt on both sides. Sprinkle thyme and grated Parmesan cheese on top. Lay slices of prosciutto over one side of the chicken.
Add olive oil in a preheated pan. Place in chicken prosciutto side down. Fry over medium heat for a few minutes, until the top side of the chicken, is no longer pinkish. Flip over and brown lightly on the other side – about 4 to 5 minutes on each side depending on the thickness of your chicken breasts. Do not overcook the chicken. Turn off heat.
Add in olive oil in a separate preheated pan. Add in asparagus, garlic, salt and pepper. Saute for 10 minutes or until tender. Turn off heat.
Cut chicken into serving pieces. Place asparagus on a platter and place the chicken on top.
