Made with ingredients such as mushrooms, chopped celery, olive oil, wine, and boneless, skinless chicken breasts, Chicken Marsala is delicious and elegant. The dish is traditionally Italian, but has become popular in many fine dining restaurants throughout the world. Surprisingly, is relatively easy to make and has thus become popular in many home kitchens. The first time I cooked Chicken Marsala I was shocked by its simplicity and absolutely delighted by the taste. This dish is excellent served with some rice or potatoes and your favorite vegetable or salad. Don’t forget some fresh dinner rolls as well as a glass of carefully chosen wine.

Ingredients:
- 4 boneless chicken breasts
- 1/2 cup Marsala wine
- 1/2 cup chicken stock
- 1/2 cup all purpose flour
- 1/2 cup button mushrooms, sliced
- 2 shallots chopped
- 2 tbsp. parsley, chopped
- 2 tbsp. butter
- 3 tbsp. olive oil
- salt and pepper

Method:
- Flatten each chicken breast by pounding or slicing in half. Set aside.
- Add flour in a mixing bowl. Season with salt and pepper. Dredge each chicken breast evenly in flour mixture and set aside.
- Add olive oil in a preheated pan. Sear chicken over medium heat approximately 2-3 minutes or until all sides are light brown. Set aside.
- In the same pan, add in a little bit of olive oil. Add in sliced mushrooms and chopped shallots. Season with salt and pepper. Stir for few minutes over medium low heat until juices comes out from the mushrooms.
- Pour in Marsala wine and continuously stir for 1 minute or until alcohol cook through. Pour in chicken stock and simmer to a boil until half reduced.
- When half reduced, add in butter and chopped parsley. Stir for a few minutes, until butter, is fully dissolved.
- Put the chicken back in the pan. Heat for 3 minutes over low heat or until sauce thickens. Salt and pepper to taste. Turn off heat and serve.
- Serve with favorite egg noodles or vegetables!
