Braised caramel pork belly is made with a combination of pineapple chunks, soy sauce, and brown sugar. It is oven roasted and then simmered in a sweet, tangy sauce. It can be braised many ways, but we have made it with a special blend of pineapples. The pineapple allows it to caramelize with its own sugar and sweetness.

Ingredients:
- 1/2 kilo pork belly
- 1/4 green onions, chopped
- 1 small onion, diced
- 1/2 cup pineapple juice
- 1/2 cup pineapple chunks
- 1/4 cup soy sauce
- 3 tbsp. brown sugar
- salt and pepper to taste
- 1/4 water
- cooking oil
- Sprinkle salt and pepper on both pork belly sides. Place in a baking pan and bake in a preheated oven at 300 degrees for at least 40 minutes or slightly brown.
- Remove from oven and allow to cool for a minute. Slice in cubes and set aside.
- To make the caramel sauce: In a mixing bowl combine the soy sauce, pineapple juice, and brown sugar. Stir well until sugar is dissolved.
- Heat cooking oil in a pan. Pan fry pork belly over a medium heat, until sides, are golden brown. Drain excess oil.
- In the same pan, saute onion until fragrant. Pour over the prepared sauce and pineapple chunks. Simmer over low heat until sauce slightly thickens. Salt and pepper to taste.
